I am a professional chef in Gainesville, FL and am a self-taught
wielder of fire and knives. I'm a highly motivated and talented professional
chef with over 17 years experience in all aspects of kitchen service, and
nearly 10 years of formal training and a lifetime of experience in the fine
arts. My ability to excel at this dual approach to food service, the utilitarian
and the artistic, has made me a formidable presence in professional kitchens.
Food is by far my favorite medium. I most enjoy working in contemporary
American cuisine with influences from the Caribbean, Central and South
America, and Mediterranean regions. I strive to provide the best possible
ingredients in a colorful and flavorful way, creating a lively, fresh,
and pleasing culinary experience with every meal.
As a manager and kitchen administrator, I enjoy leadership roles as a
means of inspiring others to love food and cooking the way I do, and
excel at
teaching the methods kitchen staff need to do their best work. All artistic
concerns are integrated with the primary administrative concerns of cost
and production. By providing such things as clear expectations of the
staff, consistent, loyalty-inspiring work relationships, and embodying
a healthy
level of professionalism, turnover/payroll waste is minimized. By maintaining
or, where needed, changing, policies and/or menus, food waste and cost
are minimized, without sacrificing quality.
